3-1/8 inch rolls for the POS, the smaller kitchen-printer rolls for the ticket line, two brands so the rail doesn't go cold if one is out of stock. Thermal paper is the cheapest part of the order that brings the whole kitchen down when it runs out. The manager who closes the shift orders by the box on the back-counter, not by the projection.
