Palm sugar in 16oz pucks and 17.5oz tubs for the curry and dessert side, C&H sugar by the 50-lb sack for the bar and the prep station, MSG for the stock and the staff-meal noodle, rock candy for the iced-tea pour. น้ำตาลปึก is its own ingredient in a Thai kitchen, not a substitute for cane, and a good cook can tell the difference in the curry before tasting it. The order follows what the curry station actually finishes.
